Chocobo Hunting isn't very hard, just run along the chocobo tracks (little birdprints on the ground when in the world map) with a Chocobo Lure Materia equipped,

Eventually you will get into a battle but instead of normal music a funky Chocobo song will play. You will be in battle with a chocobo and a few monsters. In Order To "catch" it, you must feed it some greens, then while it is eating kill the monsters that appeared with it.

After you win the message "Caught a Chocobo" will appear. Now when you exit to the world map again you will be riding a chocobo, just dismount it to send it back to the Ranch.

Now Lets Get Started!

Also: You should clearly name your chocobo as either Male Female, and it's quality
Eg. A good Female: GoFema, A great Male: GrMale

*Note* here when I list buttons I assume you are using the default controllers settings
First, you will need to pay a visit to the chocobo sage, who lives in the mountains in the North Continent, look for a small house with a green patch near it.
Buy 2 of his Sylkis Greens (5,000 Gil each)
Now, get into battle with a weak monster with no counter materias equipped, and your W-item materia equipped.
Use W-Item and select Sylkis Greens and press enter (O). Now on your second Item Selection select Sylkis green again, but this time press Cancel (X). Your Sylkis green Count should go up by one! Keeps doing this now (O) (X) (O) (X) until you have 99 sylkis greens.
*Note: If you consider this trick cheating, then feel free to buy the Greens, but you will need about 600 of them, thats alot of gil.
Next, feed your Good and Great Chocobos around 90 - 95 Sylkis Greens each. (You will need to do the greens trick again; get used to it) This will make them amazing racers when it comes to stamina
Now head over to gold Saucer and race them in the Chocobo Race, try to get them into Rank S. (This can be hard, try Holding L1 R1 L2 and R2 during the race, it will refill your already amazing stamina) They will start in rank C, but every three wins will move them up.
Once you have 2 S-Rank Chocobos (or as close as you can get) Save and Talk to Choco Billy at the Ranch and select Mating Chocobos, when he asks which nut to use select Carob.
Now, you should have either a green or blue chocobo, if not load the game and try again. Feed your Blue or Green Chocobo the Sylkis Greens and race it up to S class, it should be easier this time around.
By the time you are finished this go back to the ranch where the original Parents should be ready to mate again. Save, and have them mate with a carob nut where you should get another chocobo the opposite of your first (Eg. Green Female the first time, Blue male the second) You should know the drill by now, feed it Sylkis Greens, Race it to S- Rank.
It's time for the Inbreeding!
Save, and have your Green and Blue mate with a Carob Nut to hopefully get a Black Chocobo, which you race and feed greens until it's in S-Rank.(it MUST be)
Now go Catch a Wonderful Chocobo from the North Continent and (for the last time) feed and Race it to an S-rank (it MUST be S- rank)
Finally, Save and go to the ranch, and mate the wonderful Chocobo with your Black one using a Zeio Nut.
There you have it, the Black and wonderful Chocobo should have a Gold Chocobo,
